It's Halloween-well almost!

I've been itching for October to come so I can FINALLY decorate for Halloween!  I have a confession to make-I didn't make it!  I started decorating well over a week ago, but I did save some of my Halloween projects until October!   Last night while my husband and dad were at conference my mom finished up a few of my products.  To try and teach myself a little bit of self control-I'm only going to show you one project at a time.  Here's the first one and possibly my favorite:

I have a wall...

This week has kinda been a lazy week.  I haven't really cooked, crafted or applied for jobs.  I have done laundry and dishes so it's not like I've been overly lazy.  I've wanted to be busy but something keeps me down ... a wall!  This is not a theoretical wall but a real true wall that I can't get past.  See here it is:
This has been my downfall all week.  It's the wall you see as soon as you walk in the door and I cannot figure out what to do with it.  You see I thought about something like this:

However the lovely chair rail will get in the way, and since we're only in this house for another 6 months I don't want to go to all the effort to remove it.  So here's some other ideas I'm thinking about, and I'd love some help so if anyone reads this PLEASE leave me some ideas!!! I'm sorry I've been a blog slacker this week.  For some reason I'm in a crafting/cooking rut.  It's ok I'm know it happens from time to time, so don't worry and give me a day or two and I'll be back.  In the meantime I want to share with you my FAVORITE store!

Monster!

The weekend just never seems long enough-however I have some good news it is now officially Fall so my cute pumpkins I made a few weeks ago don't seem so out of place! Plus they're being joined by some other fun creations like this:
I purchased the supplies from my new favorite addiction The Wood Connection.

Once all the decorations are up I'll show the complete picture-I know my mantle needs a little help though so I'm off to the store!!!

Garlic Lemon Spaghetti

Anything lemony is a huge hit with my husband and anything with flavor and low calorie is a huge hit with me.  This dinner hit both marks beautifully.  
Garlic Lemon Spaghetti

4 tsp Olive oil
2 garlic cloves, minced
8 oz spaghetti noodles
8-12 fresh basil leaves, chopped
1/4 C sun dried tomatoes, chopped
1/2 C parmesan cheese
1 medium lemon
Pepper

Heat olive oil and garlic over low heat for 5-10 minutes, or until the edges of the garlic are turning brown (the point of this is to infuse the oil with garlic flavoring-so be patient it makes a difference).  Once browned set aside and reserve. While oil is heating cook spaghetti noodles according to package directions.  Drain spaghetti noodles.  Add basil leaves, sun dried tomatoes, parmesan cheese and juice of one lemon to the oil and mix (if you like the lemony flavor a little stronger you can add lemon zest to taste).  Add noodles to oil mixture and stir well.  Sprinkle with pepper and serve.

approximately 4 servings at 370 calories each

Baby Skirt

Do you remember this?
Well here is the rest of the ensemble, that I meant to post a few weeks ago.  However we had a MAJOR issue with the baby not having a matching top for the skirt, so the only thing left to do was SHOP!!!  We still need to find an off white onesie, but all in all she's pretty darn cute!

 


I had some leftover fabric from a previous project and I wanted to make a cute little skirt for my niece.  I googled free baby patterns and finally came across this one (pattern here).

This was my first baby skirt-EVER and I kind of altered it as I went along.  Sorry I didn't take pictures because there was a LOT of unpicking.  I'm working on a Halloween skirt and I'm going to follow the same steps I did with this one, so I promise I'll take pictures and show all the steps.

Catalina Meatballs and Rice

Last night I wanted to make swedish meatballs, but I couldn't remember what recipe I used last time and really liked.  I decided instead of browsing the internet for recipes I would just improvise with what I had.  This meal turned out great and it was soooo easy.  The sauce was sweet and tangy.  Hope you enjoy!!!
Catalina Meatballs and Rice
Ingredients:
4 C cooked rice (approx 2 C dry)
Desired amount of cooked meatballs (I used approx. 20)
1 C Catalina Dressing
1 C Apricot Jam
1 Pkt Onion Soup Mix

 Cook rice as desired.  Heat a skillet over medium heat, add meatballs, dressing, apricot jam, and onion soup mix.  Cook until onions are soft and meat is heated all the way through.  Serve meatballs and sauce over rice.
